Cherry gazpacho

Cherries are one of the top antioxidant-rich foods which we need to include in our diet to help prevent the onset of chronic diseases. They also contain melatonin, which regulates sleep cycles and can aid with sleep related issues.


Ingredients (Serves 4)

  • 600 g ripe tomatoes

  • 250 g cherries

  • 1 red pepper

  • 1 medium onion

  • 2 thin slices bresaola

  • 100 ml water

  • 2 tbsp olive oil

  • Splash sherry vinegar

  • Salt and pepper

Serve with fresh bread


Blend the tomatoes, stoned cherries, chopped pepper, sliced onion, water, oil and vinegar. Taste for seasoning and add sherry vinegar. Push through a sieve to get a really smooth finish. 

Serve cold garnished with the thinly sliced bresaola strips and some fresh brown bread.
