Peanut butter and banana ice cream

Bananas contain dopamine, the ‘happiness hormone’ that positively affects the nervous system. Rich in magnesium and potassium, both of which are muscle relaxants, plus tryptophan, which is converted into serotonin and melatonin to aid with sleep


Ingredients (Serves 4)

  • 4 very ripe bananas

  • 75 g  peanut butter 

  • 1 tbsp coconut oil

  • 1/2 tsp. ground cinnamon

  • 1/4 tsp. grated nutmeg

  • Pinch of salt


Slice bananas and put them in the freezer laying them flat in a single layer so that they will be easier to handle when making the ice cream. A big clump will not blend well. 

Place the frozen bananas, peanut butter, coconut oil, cinnamon, nutmeg, and salt in a food processor or blender. Blitz until creamy and smooth.

If you would like a firmer consistency then put back in the freezer for about an hour.
