Mushroom pâté

Mushrooms contain polysaccharides, one of which is a type of soluble fibre called beta-blucan. This compound activates parts of your immune system that increase your body’s ability to fight infections.


Ingredients (Serves 4)

  • 250 g mushrooms, finely chopped

  • 250g cream cheese

  • 4 garlic cloves

  • 1 tbsp coconut oil

  • 2 tbsp dill

  • The leaves of 3 thyme sprigs


Clean and trim the mushrooms and chop them finely. Heat the oil in a large frying pan over a medium heat.

Drop in the mushrooms and garlic and stir fry for about 10 minutes, or until all the moisture the mushrooms release has evaporated.

Leave to cool for a few minutes.

Blitz the mushrooms in a food processor until smooth, then add the cream cheese and the herbs and blitz again until well blended.

Season to taste then leave to cool completely.
Refrigerate for at least an hour for the garlic flavour to develop and the mixture to set completely.
